Audacity
MediaFree, open source audio editor with a long history of community development.
Why it's unshitty
Powerful cross-platform audio editor. Open source under GPL. No cloud features, no accounts, no data collection. Community maintained. After controversial telemetry changes were proposed by a new owner in 2021, the community forked and those changes were rolled back.
